Our second season of beef is now available! Give us a call to order, or save up your appetite and swing by the Enumclaw or Maple Vally Farmers Markets in a few months! We tried having three steers on the pasture this year. With such an early and long dry summer (we even resorted to irrigating parts of the field to ensure enough fresh grass!), and a slaughter date that landed on day one of snowmaggeden 2021 (we could have made it up and down our crazy steep hill with the trailer and chains – but the equipment at the Puget Sound Processors couldn’t be operated in the freezing temperatures) which led to extra feeding of organic grain, and ultimately a bale of hay from the neighbor field to help keep our ruminators going until the pasture returned from snow-covered white to beautiful winter green. End result – the cattle were significantly smaller than last year – but still as tender as ever, maybe even more packed with flavor, and every ounce ready for your decadent enjoyment with another year of local beef that has had a full 21-days of dry aging.
